Margherita Pizza Recipe

The Margherita pizza recipe is such an elegant, classic pizza recipe and yet is truly a pizza that is fit for a queen! It was invented in the late 19th century by Raffaele Esposito who owned a pizzeria in Naples, Italy.

He invented the pizza in honor of Queen Margherita to welcome her to Naples in 1889. Raffaele's classic pizza recipe called for only 3 main ingredients - tomato sauce, mozarella  cheese (a white cheese) and basil leaves. The red, white and green ingredients symbolize the colors of the Italian flag.

Ok, enough of Margherita pizza recipe trivia and on to the recipe!
WHAT YOU NEED:
12 inch pizza screen or baking pan
Pizza base - 12 inch
Tomato sauce - 1 cup (225ml)
Mozarella cheese - 150g, chopped
Basil leaves - 10 leaves
Olive oil - 1 Tbs
HOW TO MAKE IT:
Preheat oven to 240 C or 475 F
Place pizza base on the pizza screen
Spoon tomato sauce evenly onto the pizza base
Scatter cheese and basil leaves on the sauce
Drizzle olive oil over the pizza
Bake for about 15 mins or until nice and golden

Serve hot!
TIP:
Using a pizza screen instead of a pizza stone has many benefits.
The holes in the screen allows the bottom of the dough to be cooked by convection rather than conduction. Your pizza crust turns out crispier as a result.
A pizza stone is breakable, but not so a pizza screen.
It's faster to cook with a pizza screen because you don't need to pre-heat it like you do a pizza stone.
And, a screen is cheaper than a stone.
